It all starts with free radicals, highly reactive, unstable molecules that are absorbed from our environment (pollution, radiation, herbicides, pesticides) and produced by our bodies as a result of our normal metabolism (turning food into energy). The reason free radicals are unstable is that they are ionized, that is, they lack an electron with respect to stable molecules. In order to attain stability they "steal" electrons from other molecules, oxidizing them in the process. Having lost an electron, the oxidized molecule becomes itself a free radical thereby starting a chain reaction. This process may lead to damage to vital cellular components such as DNA, proteins and lipids and, ultimately, to serious conditions including cancer, diabetes and premature aging.
Antioxidants are nature's protective response to free radicals as they manage to prevent or significantly slow down the oxidizing action of free radicals. Açai contains a powerful antioxidant of the flavonoid family called anthocyanin. Coming from the Greek words "anthos" for flower and "kyanos" for dark blue, anthocyanins are the pigments that give açai its characteristic color.
